Ingredients
- 1 cup flour
- 1 cup shelled pistachios
- 1/2 cup sugar
- 1/2 cup unsalted butter
- 1 tsp baking powder
- 1/2 tsp salt
- 2 large eggs
- 1 tsp vanilla extract
- 1/2 cup milk
Instructions
- Preheat oven to 350°F (175°C).
- Grind pistachios in a food processor until finely ground.
- In a large bowl, cream together butter and sugar until light and fluffy.
- Beat in the eggs one at a time, then stir in vanilla.
- Combine flour, baking powder, and salt; stir into the batter alternately with the milk.
- Fold in the ground pistachios.
- Pour batter into a greased and floured 9x9 inch baking pan.
- Bake for 25-30 minutes, or until a toothpick inserted into the center of the cake comes out clean.
- Allow to cool in the pan for 10 minutes, then turn out onto a wire rack and cool completely.
