Ingredients

Instructions

  1. Preheat the Ninja Foodie to 375°F on AirCrisp.
  2. In a stand mixer, combine all the ingredients for the meatballs and mix on low for 2-3 mins until combined.
  3. Using a cookie scoop, portion each meatball out and roll in between your palms. Place the meatballs on parchment-lined baking sheet.
  4. Working in batches cook the meatballs in the AirCrisp basket in a single layer for 8-11 minutes or until the internal temperature reaches 135°F.
  5. While the meatballs are crisping in the AirCrisp basket, prepare the remaining ingredients.
  6. To prep the cucumber salad, toss the sliced cucumbers in a large bowl with the kosher salt. Let stand for 2 minutes then mix the remaining ingredients; red onion, white wine vinegar, sugar and dill. Cover and refrigerate until ready to serve.
  7. To prep the tatziki sauce, combine the minced cucumber with salt in a medium bowl. Let stand for 2 minutes then mix the remaining ingredients; Greek yogurt, lemon juice and fresh dill. Cover and refrigerate until ready to serve.
  8. When the meatballs have finished cooking assemble your plate. Serve the meatballs with fresh garlic and herb naan bread or plate over a bed of salad greens. Serve with a side of cucumber salad and serve with a heap of tatziki sauce.
